Homemade Peanut Butter Cookies
1.) 1 cup of peanut butter (can substitute crunchy, almond, soy, etc)
2.) 1 cup of sugar
3.) 1 egg
We thought about a month ago that Eden was having an allergic reaction to peanut butter, so my mom picked up some soy nut butter from Kroger. Turns out, she was not allergic to peanut butter (that we have discovered) and her allergic reaction is still a mystery.
So, we decided to use the soy nut butter for the firefighter's cookies, just in case anyone there has a peanut allergy. These cookies are great for those who eat gluten free too!
(*Note: This peanut butter is not part of the current recall, in case you were worried. I checked first!)
This recipe typically yields between 19-20 cookies, depending on how small you roll the dough out. Use a fork to make the crisscross pattern, pop them in the oven for 10-20 minutes at 350 degrees, and you are done!!
